Rocket Top: The One Redwood Empire Actually Distills

Rocket Top is Redwood Empire's bonded rye, and it is the bottle in their range that earns the California claim outright. The label reads "Distilled Grain to Glass in Sonoma County, California" under DSP-CA-20056.

That distinction matters. Most of the Redwood Empire lineup, Pipe Dream and Emerald Giant included, is distilled in California, Indiana and Kentucky and then blended in Sonoma. Rocket Top is made start to finish in house, from grain, with water drawn from the Russian River Valley aquifer.

Bottled in Bond Is the Strictest Label in American Whiskey

Under the Bottled-in-Bond Act of 1897 this must be the product of one distillery in one distilling season, aged at least four years in a federally supervised warehouse, and bottled at exactly 100 proof. This one goes past the minimum at five years.

For a craft distillery to bottle in bond at all, it has to have been distilling long enough to have five year old stock of its own. Very few can.

A Rye Mash Bill Near the Ceiling

Rocket Top runs roughly 85 to 87% rye, with malted barley and a little wheat making up the rest. Redwood Empire changes the recipe slightly with each bonded release and blends barrels of differing rye content for complexity, so the exact split and the barrel count move from batch to batch. Recent lots have run from 26 barrels up to 69.

The Tree

Rocket Top is a coast redwood in Humboldt Redwoods State Park, standing about 365 feet and estimated at roughly 2,000 years old.

• Nose: Fresh pine sap and maple candy, with clove, sandalwood and fallen leaves behind it.
• Palate: Rye spice and cinnamon against caramel corn and fig jam, with a savoury depth and a hint of pink peppercorn.
• Finish: Long, spice and oak holding on, closing on a touch of dark chocolate.

How to Enjoy

• Neat: 100 proof is the bonded standard and it is the right strength for this whiskey. Nothing needed.
• One cube: opens the maple and caramel without thinning it.
• Sazerac or Vieux Carré: a five year bonded rye at 100 proof is exactly the spec those drinks were built on.
• Side by side: pour it against Emerald Giant to taste the difference between rye they distilled and rye they sourced.
