Wilderness Trail Wheated Bottled in Bond: 24% Wheat, Sweet Mash, 100 Proof

This is the yellow label wheated bourbon from Wilderness Trail Distillery in Danville, Kentucky. Two things make it unusual, and both are on the label if you know where to look.

One of the Highest Wheat Ratios in Kentucky

The mash bill is 64% corn, 24% wheat and 12% malted barley. For comparison, most wheated bourbons run 10 to 16% wheat. At 24% this is close to the practical ceiling, and it is why the whiskey drinks soft and bready rather than sharp, even at 100 proof.

Sweet Mash, Not Sour Mash

Almost every Kentucky distillery uses sour mash, carrying a portion of the spent mash into the next batch to control acidity. Wilderness Trail runs sweet mash: a completely fresh mash every single time, with nothing carried over. It is a harder way to work because there is no acidic backstop against infection, so it demands near laboratory sanitation.

Which is the point. Founders Dr. Pat Heist and Shane Baker spent over a decade supplying yeast and fermentation optimization to much of the bourbon industry before building their own distillery in 2013. They are fermentation scientists who decided to make whiskey, and sweet mash is what that expertise buys you.

The industry noticed. In October 2022, Campari Group paid $420 million for a 70% stake. The distillery has also taken Gold at the San Francisco World Spirits Competition.

What Bottled in Bond Actually Guarantees

Under the Bottled-in-Bond Act, this whiskey must be the product of one distillery, one distilling season, aged at least four years in a federally supervised warehouse, and bottled at exactly 100 proof. It is the strictest label claim in American whiskey, and there is nowhere to hide behind it.

Tasting Notes

• Nose: Maple syrup and cinnamon with nutmeg, clove and a note of sour cherry.
• Palate: Vanilla and milk chocolate over golden apple and baking spice, on an earthy backbone.
• Finish: Soft and bready from the wheat, with the char coming through late.

How to Enjoy

• Neat: non chill filtered at 100 proof, so the texture is there. Drink it as bottled.
• Old Fashioned: the wheat softness and 100 proof are close to ideal for it.
• Side by side: pour it against a standard wheated bourbon at 12% wheat and the difference is obvious immediately.
