Zucca Rabarbaro began as a doctor's remedy in 19th-century Italy, then evolved into one of the great Italian digestivos when the patient's husband modified the formula with Chinese rhubarb roots (rabarbaro), medicinal herbs, orange zest, and cardamom. Now relaunched on the original 1845 recipe, its bittersweet herbal flavor and slightly smoky, earthy intensity make it as compelling in cocktails as it is neat — with a splash of soda and citrus, it makes a fine aperitivo.
